I own a 311 and love it.
The 310 and 311 are very similar.
I only chose the 311 over the 310 because I liked the looks of the 311 better.
All the other differences were negligible for my wants.

At just over 5" long the 311 is not a nose-warmer (IMO).
But, it's short enough and light enough to comfortably clench.

The 310 has the advantage of a slightly bigger bowl over the 311.
However, the slight increase in length/weight will make it a little bit less of a clencher.
Still, I have a Stanwell that's almost identical in size to the 310 and clenching it is not uncomfortable.

Were I making the choice again and looks were equally appealing to me, I would decide which is more important to me: that the pipe be a great clencher or that it have extra bowl capacity.
Then go from there
Frankly, you can't go wrong with either since both are at least "good" in both categories (capacity & clenchability).
